Perhaps the most traditional spice of Greek cuisine with many uses mainly in meat and even in salads such as our famous choriatiki.

Use to flavor olive oil with which we spread on the meat when it is to be baked

It also flavors cooking salts and we will see it on fried potato. Probably the most popular spice in the barbecue.

Chicken with oregano

Ingredients

  • 1 chicken (1½ pound in 6 servings)
  • 2 sk. whole garlic
  • 1/3 fl. olive oil
  • 2 lemons (juice)
  • 1 fl. white dry wine
  • 1 tbsp. oregano
  • Salt and pepper

 Method

In a frying pan, put the chicken portions together with the olive oil and garlic and bake for 7 ‘- 8’ until  golden

Add the lemon juice.

Add the wine and allow the alcohol to evaporate and 1fl. Water

As soon as the chicken comes to a boil, cook for 1 hour and 15 minutes, until the chicken has softened. Salt and pepper.

Toward the end of boiling time, add the oregano. The food should be left with very little sauce, almost with its oil.
